After arriving at the cellar, the grapes are pressed and destemmed and then fermented in red with frequent pumping over. The permanence on the marc is short to avoid excessive release of tannins and promote harmony and freshness, just as there is no permanence in the wood.
Bottling takes place in the spring of the second year following the harvest.
