Heredia Pinot Noir Trentino DOC 2021

The grapes come from small vineyards on the sides of the valleys with good exposure and ventilation, on
native or accumulation soils, poor in organic substance, are harvested by hand, and arrived in
cellar, carefully destemmed and fermented in small steel containers with frequent pumping over at
aim of keeping the "cap" formed by the peels submerged, and in this way delicately extracting
the aromatic and tannic substances contained in them. After 8/10 days in which fermentation takes place
alcoholic at a temperature that does not exceed 25/27°C, the new wine is placed in small wooden barrels
where it completes its formation with malolactic fermentation. This is followed by an initial racking and
the refinement begins in barriques of different woods and ages, after which it is assembled in steel
and shortly after the bottling.
