Stay 2021 Toscana Rosso IGT

The IGT comes from a blend of Cabernet Sauvignon (50%), Merlot and Syrah (30%) and Sangiovese (20%). The harvest is done manually with an initial selection of the bunches in the field, which are then destemmed and the grapes are further selected on the sorting table. Fermentation takes place for about 7 days in steel tanks at a controlled temperature, between 26°-28°C, followed by maceration on the skins for another 10-15 days. After racking, malolactic fermentation follows. The wine ages in French barriques and tonneaux for 13 months before being released for sale.
